Original Recipe



  1. Cook the bacon over medium heat rendering fat. Once crisp transfer to a paper towel lined plate
  2. Add leeks, onion, and salt, and cook slowly over medium-low heat until paste like 30 - 40 mintues
  3. Add potatoes, chicken broth, and more salt to pot. Cook until potatoes are soft ~30 minutes
  4. Puree the mixture with a blender
  5. return to pot, and bring up to serving temperature taste for seasoning (cayenne, salt), I added a bit of cholula
