Original Recipe



  1. Render bacon, move bacon to pot
  2. Cook beef in bacon grease, move to pot
  3. sweat onions / garlic, add beer to pan, move to pot
  4. Add tomato paste, thyme, celery, and carrots to stew pot
  5. Simmer stew on very low heat, covered for about 2 hours (was actually 2 hours 40 minutes)
  6. Uncover raise heat to med-high and reduce stirring occasionally until sauce thickens.
