  1. mince the garlic, and saute in sauce pan with vegetable oil over medium heat for two minutes until fragraent
  2. Add can of diced tomatoes, and green chilies to sauce pan and let simmer 8 minutes until reduced by about half
  3. Add cubed cream cheese to sauce a bit at a time stirring each addition until fully melted / incorporated
  4. Add the rinsed / drained can of black beans, cup of corn, shredded chicken, and cumin to the cheese / tomato mix
  5. Scoop 1/3rd of filling into each flour tortilla, and roll into tubes place tubes in 12" x 8" casserole dish.
  6. Cover with enchilada sauce
  7. Bake in 350 degree oven for 40 minutes
