  1. Chop shallots, garlic cloves, ginger, chilis, add to food processor with salt, coriander, tumeric, nut meg, lime, and lemon zest. Process into a paste
  2. In a pressure cooker Cook paste in oil over medium heat until the raw flavor is cooked off, and maybe a little bit of browning
  3. Add beef, coconut milk, and enough water to cover.
  4. Increase heat to high, put on lid, and bring to high pressure.
  5. Cook over high pressure for 30 minutes.
  6. Release pressure quickly
  7. Remove lid, reduce almost all of the liquid over medium heat
